Craving ribs but don’t have all day to slow-cook them? These Instant Pot pork ribs are incredibly tender thanks to pineapple juice and take under an hour from start to finish. You’ll get juicy, flavorful ribs with sticky BBQ sauce on top—perfect for weeknight dinners or weekend cookouts!
Prep the ribs: Pat the ribs dry with a paper towel. If needed, remove the silver skin (the thin membrane on the back of the ribs) using a small knife. Most store-bought ribs already have it removed.
Season the ribs: Sprinkle salt all over the ribs, then coat them evenly with your favorite BBQ rub. Be sure to rub it in on both sides for full flavor.
Add the liquids to the Instant Pot: Pour pineapple juice, apple cider vinegar, and bbq sauce into the bottom of the Instant Pot.
Place the ribs in the pot : Roll the seasoned ribs into a coil and place them inside the pot with the bone side facing in and the meaty side facing out.
Pressure cook the ribs : Seal the lid and set the Instant Pot to High Pressure for 20–25 minutes. Let the pressure naturally release for 10 minutes, then do a quick release.
Brush with BBQ sauce and broil : Carefully remove the ribs and place them meaty side up on a foil-lined baking sheet or cooling rack then baking sheet. Brush with your favorite BBQ sauce and broil on high for 15–20 minutes, until caramelized and slightly charred.
Rest and serve : Let the ribs cool for 5–10 minutes before slicing or pulling them apart. Serve with extra BBQ sauce on the side and enjoy!
