Is this Curry Puff same with Karipap and Samosa

In this recipe, the curry puff is the puff pastry that is made of plain flour mixed with clarified butter that is rolled out and fold into layers. In fact, I just used a store bought puff pastry dough to make things easy. They are not the same with Karipap (Curry Puff) that is deep fried and or baked to get the shell like the British Cornish pastry. That type of Curry Puff or Karipap is well known in Thailand, Malaysia, and through out South East Asia. I want to make it clear to you before you start making them :).

You can definitely customize this dish and here’s how.

As mentioned above that I used leftover Thanksgiving turkey in this recipe. However, feel free to use rotisserie chicken if you’d like. Also, the traditional curry puff pastry in Thailand use the chicken breast or thigh. If you’d like to use the fresh chicken, just make sure to add the chicken to the pan after sautéing onion until translucent. Once the chicken is cooked through, add potatoes, curry powder and other vegetables.

How to store and reheat curry puff?

Simply keep them in an airtight container and store in the fridge up to 2-3 days. If keeping for longer, tightly wrap individual pastry in aluminum foil, place in a ziplock or a container, and store in the freezer until ready to eat. I recommend that you finish eating it within a month.

To reheat, if taking it out from the fridge, you can microwave it for about 20 – 30 seconds. If taking it out of the freezer, bake a foil wrapped pastry in the oven at 350 degrees Fahrenheit for about 10 minutes.

Equipment

Ingredients
  

  • 2 pastry sheets
  • 2 cups diced leftover turkey or rotisserie chicken or chicken breast or thigh
  • 2 1/2 cups diced potatoes russet or Yukon Gold
  • 1/2 cup diced onion
  • 1/2 cup diced carrot frozen or fresh
  • 1/2 cup green peas frozen or fresh
  • 2 tbsp curry powder
  • 2 tsp sugar
  • 1/4 – 1/2 cup water
  • 3 tbsp soy sauce
  • 1 tsp ground pepper black or white. I use white ground pepper.
  • 1 egg for egg wash/brushing

Instructions
 

  • Thaw the puff pastry in the room temperature (40-50 minutes). Dice potatoes, onion, and carrot then set them aside.

    Make the filling. In a pan, melt butter and sauté the onion until translucent then add potatoes, water, and curry powder. Keep stir frying until the potatoes are cooked. (Poke the potato, if the utensils slides easily to the center, the potato is done.)

    Add peas, carrots, and leftover turkey. Season with soy sauce, sugar, and ground pepper. Once the vegetables are soft, let it cool down before wrapping.

    Flour the surface. Use a rolling pin to roll the dough if any part is torn or broken. Cut the dough into 4 squares.

    Put the filling on the dough and fold it into triangles (or any shape you'd like). See the pictures. Line the baking sheet with parchment paper. Beat an egg and brush the top of the pastry. Chill the pastry in the fridge so that they puff well once they hit the oven.

    Preheat the oven at 400 degrees Fahrenheit. Meanwhile, chill the curry pastry in the fridge. Once the oven is heated, bake for 15 – 20 minutes. Let them cool down on a baking rack. Enjoy them warm or cold. They are great for lunch on a go too!

Notes

  • The filling is very tasty and there will be some leftover filling after the bake. You can enjoy it by itself or with rice. I always have to prepare the filling more than the amount of dough otherwise my husband will finish all the filling of before I can stuff it in the pastry dough lol!
