What to use and how long to marinade pork ribs?
This recipe simplifies marinating by doing it while pressure-cooking the ribs, saving time. Despite starting pale, the ribs remain tasty. The marinade are the Thai Holy Trinity spices -garlic, cilantro roots or stems, and peppercorn. In your Instant Pot or preferred pressure cooker, combine ribs, water, soy sauce, fish sauce, a touch of sugar, and spices. Cook for 25 minutes to achieve a deliciously balanced broth and fallen of the bones meat. This versatile broth enhances various dishes like Leng Saeb, Tom Yum Noodle Soup, Congee (rice porridge), wonton soup, and stuffed cabbage roll soup.
What makes Asian ribs red?
Unlike the red hue from red food coloring found on char sui or Chinese ribs, the vibrant color of my sticky Asian pork ribs comes from Gochujang, a Korean chili paste. Rest assured, these ribs boast a delightful blend of sweetness (Gochujang) and spiciness from Gochugaru (Korean chili flakes). What to serve with sticky pork ribs?
Our family enjoys serving sticky Asian pork ribs with pasta salad, rice, and cucumber kimchi. It’s a hit at parties! I suggest preparing side dishes while the pressure cooker is on, as these ribs cook in just 45 minutes.
Other methods you can use when making Asian ribs
If a pressure cooker isn’t currently available in your kitchen, don’t fret. Other methods can yield similar results, though slightly different. Below are alternative methods, listed in the order of my recipe’s success.
- Utilize a slow cooker (crock pot). In the slow cooker, position ribs with bones facing inward and meaty side down. Add water, spices, and seasoning. Cook on low for 6-8 hours. Afterwards, brush both sides with my Asian BBQ sauce. Transfer ribs to a rack and broil for 10 minutes. Brush with sauce again, then sprinkle sesame seeds and green onions.
- Try slow cooking in the oven method. Mix Thai spice paste with soy sauce, fish sauce, and a bit of sugar. Rub this seasoning paste over the ribs, then wrap in foil. Slow cook in the oven at 275 degrees for 2 hours. Next, brush ribs with BBQ sauce, rewrap, and bake at 350 degrees for 2 hours. Finally, brush ribs with BBQ sauce again, uncover, and broil for 5-10 minutes. Finish by brushing more BBQ sauce and sprinkling green onion and sesame seeds.

For Ribs Marinade
- 4-5 cloves garlic
- 1 tsp peppercorn or 1.5 teaspoons ground pepper
- ½ tsp coriander seeds optional but highly recommended
- 2½ tsp sugar or sweetener of your choice
- 8-10 cilantro stems or 2-3 cilantro roots
- 1 tbsp fish sauce
- 2 tbsp soy sauce.
- 4 cups water
- 3½ lb back ribs or St. Louis or spare ribs
For Asian BBQ Sauce
- 1 cup pure maple syrup
- 4 tbsp Gochujang
- 4 tbsp ketchup
- 4 tbsp Gochugaru Korean chili powder
- 2 tbsp garlic powder
- 4 tbsp soy sauce
Instructions
Make marinade and pressure cook the ribs.
- In a mortar, pound peppercorn, cilantro stems, and garlic (and coriander seed if desired) together to create a seasoning paste.
- Remove the silver skin or membrane from the back of the ribs using a small knife if necessary. However, this step is often unnecessary when using store-bought ribs.
- In the pressure cooker, arrange the ribs with the bones facing inward and the meaty side facing the pot. Add 4 cups of water and the seasoning paste made earlier. Also, include soy sauce, fish sauce, and a small amount of sugar.
- Pressure cook the ribs for 25 minutes.
In the mean time, make the BBQ sauce.
- While the ribs cook, prepare the Asian BBQ sauce. Combine maple syrup, Gochujang, ketchup, soy sauce, gochugaru (Korean chili flakes), and garlic powder in a saucepan. Heat over medium heat, stirring constantly for 5-10 minutes. Remove from heat. The sauce will thicken as it cools.
Glaze, Broil, and Serve
- Once the timer on the pressure cooker goes off, release the vapor. (You can cover the pressure cooker vent with a kitchen towel if you prefer). Remove the ribs and store the cooking stock in a jar for use in other dishes.
- Preheat the oven to broil. Line a baking sheet with tin foil and place a rack on top. Brush BBQ sauce generously over the ribs on both sides. Transfer the glazed ribs to the rack on the baking sheet and broil for 5-10 minutes or until nicely charred.
- Slice the ribs into individual pieces if desired, then brush with more BBQ sauce. Sprinkle sesame seeds and chopped green onion as garnishes. Serve alongside rice, cucumber kimchi, or a salad, and enjoy!y!
