Keto Friendly Zucchini Waffles Recipe

Tricky Things about These Waffles
- They actually taste better cold or slightly warm than hot and fresh.
- You can increase the airiness in the waffles by beating separating the egg white from the yolk. Add the beaten yolk to the wet ingredients of your batter. Then, beat the egg white until stiff peaks form. Fold the eggs white gently into the final batter using a silicone spatula. However, if you prefer to keep things simple, skip this suggestion and just start the batch by beating eggs and sugar, followed by oil, milk then dry ingredients.
- The amount of fat in your batter will determine whether or not your waffles will stick to your waffles maker. I highly recommend using coconut oil that is melted and cool to room temperature in this recipe to prevent waffles from drying out easily.
- Keep in mind that cocoa powder dries out your baked goods more than usual. With this recipe being gluten free, please again use coconut oil. If you decide to use butter, please let me know in the comments how it goes for you. I’ve not done that and would love to hear from you:).
Keto Friendly Zucchini Waffles (about 5 grams carb, gluten -free, and high protein)

Ingredients
- 2 cups almond flour or almond meal
- ¼ cup unsweetened cocoa powder
- ½ tsp baking powder
- ½ cup milk I used almond milk but you can use regular ones too.
- ¼ cup coconut oil melted and cool
- ¼ cup granulated monk fruit
- 3 eggs
- ¼ tsp salt and more to draw out the moisture from zucchini
- ¼ tsp vanilla optional
- ½ cup shredded zucchini
Instructions
Prepare Zucchini
- Shred the zucchini then sprinkling some salt over it. Mix salt and zucchini with your hands and leave it to draw out the moisture while preparing other ingredients.
- Drain the zucchini water out.
Making the Waffles Method 1. Keep it simple but they wont be as soft and airy. Also crispy on the outside. Just like the ones in the photo above.
- Beat eggs and granulated monk fruit together. Follow by milk, salt and vanilla. Mix well.
- Add cocoa powder, baking powder, and almond flour. Fold the dry ingredients to the wet. Then fold the zucchini into the mixture.
- Grill/bake the waffles in the waffle maker. After the green light (that said "ready"), open the lid but keep grilling for another 30 seconds to 1 minute. Take the waffles out to cool. Serve with Keto friendly syrup and less sugary fruit such as raspberries and blueberries.
Making the Waffles Method 2. For softer and more airy waffles.
- Separate eggs white and yolk. Beat the egg white until stiff peaks form.
- Beat the yolk with the granulated monk fruit, salt, milk, and vanilla together. Follow by the almond flour, cocoa powder, and baking powder.
- Fold the beaten eggs white to the mixture follow by the zucchini. Grill/bake the waffles in the waffle maker. After the green light (that said "ready"), open the lid but keep grilling for another 30 seconds to 1 minute. Take the waffles out to cool. Serve with Keto friendly syrup and less sugary fruit such as raspberries and blueberries.
