How to Make Sweet Sticky Rice.

In this recipe, I’ve opted for the traditional approach instead of following the trend of cooking sticky rice in a rice cooker. However, this hints that there are several methods to cook sticky rice. I believe soaking the rice for at least four hours and then steaming it gives the rice a perfect balance between softness and firmness.

  1. To start, wash and rinse the rice at least three times, or until the water in the bowl is clear. This process helps remove excess starch and any heavy metals that may be present in the rice.
  2. Ensure that the water level is approximately an inch or slightly higher above the rice. Allow it to soak for at least 4 hours or overnight.
  3. Drain the water and steam the rice for 20 -25 minutes. The amount of water in the steaming pit should be about 1/3 of the pot.

  5. After the rice is cooked, mix it with the sweet coconut sauce in a bowl. Cover and allow the rice to absorb the sauce for at least 30 minutes. Do not refrigerate!

Coconut Sauce VS Coconut Gravy (Topping)

Both the coconut sauce and coconut gravy complement sticky rice beautifully. However, while the coconut sauce is essential for mango sticky rice, the gravy serves as a topping. Thus, your mango sticky rice remains complete even without the coconut gravy.

The sweet coconut sauce has a lighter consistency, while the gravy is thicker due to the addition of corn starch. Its texture and flavor resemble another Thai dessert known as “Khanom Tako” or coconut pudding. If you find my coconut gravy too thick, you can thin it out with more coconut milk, but refrain from adding extra sugar.

How to Store and Reheat Sweet Sticky Rice.

The best way to store this sweet sticky rice is, of course, in your stomach—just kidding! Jokes aside, vacuum sealing is the optimal method if you plan to store it for more than 2 days. Alternatively, store it in an airtight container and refrigerate for up to 3-4 days.

I highly advise against making too much rice and consuming it on the same day without refrigerating. The texture of the rice becomes tough after refrigeration, and microwaving won’t restore it to its original state. While sprinkling water on the sweet rice and microwaving it with a cover to create steam may improve its texture slightly, it won’t be the same. Thus far, the only method I’ve found effective is steaming the sweet sticky rice for 8 minutes, stirring or folding it, and then steaming for an additional 2 minutes.

Mangoes that Pair Well with Sweet Sticky Rice.

Essentially, you can pair sweet sticky rice with any ripe mangoes. To determine if the mangoes are ready to be served with sweet sticky rice, consider three things:

  1. Check for a black or dark brown stem at the top of the mango.
  2. Gently press the mango with your thumb; if the skin feels soft instead of firm, it’s ripe. If it’s hard, it’s not ready.
  3. Smell the mango; it should have a sweet aroma. Never judge mangoes solely by their color though they are mostly yellow when ripen.

In Thailand, “Nam Dok Mai” mangoes are commonly served with sweet sticky rice. However, in the United States, the Ataulfo mango, in the above picture, is more readily available and is the closest equivalent to the Nam Dok Mai mango in this part of the world.   • 100 mL coconut milk You can add more later if it's too thick for you.
  • ¼ cup sugar
  • 1 tbsp corn starch or Tapioca starch
  • tsp salt or just a pinch of salt
Mangoes
  • 2 mangoes for 4 servings

Instructions
 

Prepare and Cook Sticky Rice
  • To start, wash and rinse the rice at least three times, or until the water in the bowl is clear. This process helps remove excess starch and any heavy metals that may be present in the rice.
  • Soak the rice. Ensure that the water level is approximately an inch or slightly higher above the rice. Allow it to soak for at least 4 hours or overnight.
  • Fill 1/3 of the pot and boil the water.
  • Once the water reaches a rolling boil, dampen the muslin or cheesecloth and line the steaming basket with it. Strain the rice and place it in the steamer over the dampened cloth. Close the lid and reduce the heat to medium. Steam the sticky rice for 20-25 minutes. In the meantime, begin preparing the coconut sauce and coconut gravy.

  • Use medium heat and combine coconut milk with sugar, stirring until the sugar is completely dissolved. Set it aside.
Make the coconut gravy and toast split moong beans. (Optional)
  • Combine coconut milk, sugar, a pinch of salt, and corn starch in a saucepan. Stir to combine, then cook over medium heat. Stir constantly until the sauce begins to thicken, which usually takes 3-5 minutes. Once thickened, remove from heat and set aside.
  • Toast the split moong beans over medium heat for about 5 minutes or until they turn golden brown. (Optional)
Assemble
  • Once the sticky rice is cooked, mix it with the coconut sauce. Cover it and let it sit for at least 30 minutes to allow the rice to absorb the sweet coconut sauce.
  • Peel and slice the mangoes. Typically, I use half a mango and half a cup of sweet sticky rice for each serving. Serve the sweet sticky rice alongside the mangoes, and top with coconut gravy and split moong beans. Enjoy!
