What is Tom Yum?

“Tom” means boil and “Yum” in Thai is sour and spicy salad. You may be familiar with Tom Yum Goong. It is one of the most iconic soup from Thailand for bold and flavorful flavor. Read more reasons why it is so popular from Thaieatery. This noodle dish is a twist of Tom Yum Goong Soup yet remain about the same flavor profile. The noodle version does not required shrimps or other seafood unless you want to. Moreover, the base of the broth does not require to have the Tom Yum herbs like lemongrass, galangal, and kaffir lime leaves. But the freshness of lime juice and other seasonings help you to achieve the right flavors! Please, see the main ingredients photo below.

How to make the noodle version?

Simply fried garlic to make it crispy and for the aromatic oil or use the store bought fried garlic. Set it aside then add water or stock. I tried it both ways and both taste great. However, I prefer to utilize the stock that I get from my instant pot Asian ribs such as Leng Saeb. But again, you can just use water. Cook the rice noodles for 3 -5 seconds. If using the dried rice noodle, make sure to rehydrate with room temperature water for about 5 minutes before cooking. Set it aside in the bowl and coat with garlic oil. Add ground pork to cook, season, pour on to the noodle and garnish with toppings of your choice. That’s it!

Equipment

Ingredients
  

For the Tom Yum Noodle Soup
  • 2 tbsp vegetable oil
  • 2 tbsp minced garlic
  • 1000 mL water or stock
  • 1 lb ground pork
  • 1 tsp chicken bouillon optional
  • 6 tbsp fish sauce
  • 2 tsp Thai chili jam or sugar
  • 5 ½ tbsp lime juice fresh
  • 2-3 tsp chili flakes start from 2 teaspoons
  • 5 tbsp crushed roasted peanuts 🥜
  • 200 grams rice noodles 1-2 small bundles for the dried noodles or 100 grams per serving
For Toppings
  • 1 tbsp chopped cilantro
  • 1 tbsp green onion
  • 1 boiled eggs optional
  • 2 – 4 shrimps optional
  • 2 tbsp bean sprout optional

Instructions
 

Prepare ingredients and toppings
  • If you'd like to add boiled eggs as part of your toppings, boil the water until rolling boil. Add eggs from the fridge to the pot then turn the heat down to medium. Boil eggs for 8 minutes and transfer to ice cold water. Let the egg stays in the egg bath for 5 minutes then peel and slice with eggs with a knife or a dental floss.
  • If you use the dried rice noodle or rice sticks, soak the dried noodle in room temperature water for about 5 minutes.
  • Chop cilantro, green onion, and garlic. Set them aside.
Make the soup and cook the noodle
  • Heat the pot or wok. Add oil and minced garlic. No need to wait unto the oil is hot or the garlic will burn. Fry the garlic with medium heat until the small bits turn golden brown. Then transfer the crispy garlic and oil to a small bowl Set it aside. The garlic will continue to get cooked in the bowl.
  • In the same pot or wok, add water or stock (pork or chicken). Use high heat. If using water, you can also add chicken bouillon. Once the water if rolling boil, add the noodle into a strainer and cook the noodle for 3 – 5 seconds.
  • Transfer the cooked rice noodle to a serving bowl. Add 1-2 teaspoons of crispy garlic and oil to coat the noodles. This will prevent the rice noodle from sticking together too much. Set it aside.
  • Add ground pork into the pot. Turn the heat down to medium heat. Use the spoon or ladle to break the ground pork into small chunks. If. you'd like to add some shrimps as part of toppings, add the shrimps to cook as well.
  • Once the pork is cooked (turning from red to gray), season with fish sauce, sugar or chili jam, and chili flakes.
  • Turn the heat off and add fresh lime juice, crushed roasted peanuts, chopped cilantro, and green onion.
  • Pour the soup into the noodle bowl. Top with boiled eggs and more green onion and cilantro if desired. Enjoy!
