Thai Shrimp and Pork Fried Rice
I make my Thai-style pork and shrimp fried rice without sesame oil for an authentic Thai flavor.

Main Ingredients
- Cold cooked rice: Use day-old rice for the best texture so each grain stays separate when stir-fried.

- Peas and carrots: Add for sweetness, color, and a bit of crunch in each bite.
- Eggs: For extra richness and protein.
- Green onion: Slice and add at the end for freshness and a mild onion aroma.

- Oil: Heat in the wok before cooking to prevent sticking and help flavors bloom.
- Oyster sauce: Adds savory depth and a touch of natural sweetness.
- Salt: Season lightly at first, then adjust at the end to taste.
- Pepper: Use white pepper for a more authentic Thai flavor, or black pepper if preferred.
- Soy sauce: Balances saltiness and enhances umami flavor.
- Dark soy sauce (optional): Add a small splash for richer color without overpowering the dish.

How to Make Thai-Style Pork and Shrimp Fried Rice
- Sauté garlic and cook shrimp: Heat oil in a wok, sauté garlic for a few seconds, then add shrimp and cook until just pink. Remove and set aside.
- Cook pork with green onion: Add the white part of the green onion to the wok, sauté briefly, then add ground pork. Season with pepper and a little soy sauce, cooking until about 90% done. Push to one side of the wok.
- Scramble eggs: Crack eggs into the empty side, let set for about a minute, then scramble until just cooked.
- Add rice and vegetables: Stir in cold cooked rice, breaking up clumps, then add carrots and peas.
- Season and finish: Toss with oyster sauce, soy sauce, and optional dark soy sauce. Add the remaining green onions and the cooked garlic shrimp, stir well, and serve hot with cucumber slices and Nam Pla Prik.

- 2 TBSP minced garlic
- 1/2 lb shrimp (10 -12 shrimp)
- 1/2 lb ground pork
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 eggs
- 2 cups cold cooked rice
- 2 cups peas and carrots
- 2 TBSP oyster sauce
- 1 TBSP soy sauce
- 1 tsp dark soy sauce (optional)
- 1/2 cup chopped green onion
- 1 recipe Nam Pla Prik or Prik Nam Pla (optional)
Instructions
- Sauté the garlic and cook the shrimp: Heat oil in a wok over medium-high heat. Add minced garlic and stir-fry for a few seconds until fragrant but not browned. Add shrimp and cook until just pink, then remove from the wok and set aside.
- Cook pork with green onion: Add the white part of the chopped green onion to the wok and sauté briefly. Add ground pork, season with pepper and a splash of soy sauce, and cook until about 90% done. Push the pork to one side of the wok.
- Scramble the eggs: Crack eggs into the empty side of the wok. Let them set for about a minute, then scramble until just cooked.
- Add rice and vegetables: Stir in cold cooked rice, breaking up clumps as you go. Add peas and carrots, tossing everything together.
- Season and finish: Add oyster sauce, soy sauce, and optional dark soy sauce. Return the cooked garlic shrimp to the wok along with the remaining chopped green onion. Stir-fry until everything is evenly coated in sauce, then serve hot with cucumber slices and Nam Pla Prik (optionally).
