Easy Shrimp Fried Rice Recipe: Thai Style

What makes this fried rice Thai style?

  1. Less greasy than the regular takeout fried rice.
  2. Though this fried rice tastes great on its own, it is served with a condiment that takes it to another level. That condiment is called “Nampla Prik”. The combination of a little bit of fish sauce, fresh lime juice, minced garlic, and Thai chilies drizzling on this fried rice and the seafood gives a little kick and more flavorful!

Recipe Tips

  1. Make sure your wok, pan, or skillet is very hot just like you are then coat it with hot vegetable oil all over so that the rice and other stuff won’t stick the wok easily.
  2. Use cold left over rice so that it won’t get mushy. However, if you only have hot rice on hand, spread the rice thinly on a baking sheet to let the steam out while preparing other ingredients.
  3. The veggies and be fresh or frozen. It doesn’t matter. It will cook quickly in a short time making this fast food not junk food!
  4. Pouring the sauce from the side of the wok will help it to heat up before reaching other ingredients increasing the “Wok Hei” or the wok aroma for the food. If you are like me, sometimes tripping while cooking or simply forget about this tip. It’s ok. Your food is still going to be delicious.

Equipment

Ingredients
  

  • 2 cups cooked rice cold left over white rice
  • 10 shrimps (Peeled and devein)
  • 3 eggs
  • cup carrots fresh or frozen
  • cup peas fresh or frozen
  • 2 cloves garlic minced
  • 2 tbsp seasoning soy sauce or regular soy sauce Click on the link for seasoning soy sauce that I use.
  • 1/2 tsp sugar
  • 1/2 tsp pepper white or black (ground)
  • 2-3 tbsp vegetable oil or bacon grease
For Nam Pla Prik (Optional)
  • 1 tbsp fish sauce Click on the link for the brand I use.
  • 1 clove minced garlic
  • 1 minced Thai chili
  • 1-2 tsp fresh lime juice
Garnishing (optional)
  • 1 green onion chopped
  • 1 cilantro chopped

Instructions
 

  • Heat the wok until very hot. Add 1 Tbsp vegetable oil or bacon grease. Make sure the wok is very hot and cover with grease all over. (Use high or medium high heat.)
  • Add shrimps then garlic. Cook them half way done (30 seconds to 1 minute).
  • Push the shrimps to the side and add another spoon of oil. Add eggs and let it cook there for another minute. Then scramble the eggs.
  • Add the leftover rice. Stir fry and make sure the eggs coat most of the rice.
  • Add frozen carrots and peas. Stir fry for another minute. Add another spoon of oil if needed.
  • Season with seasoning soy sauce (Maggie) or regular soy sauce. Add sugar and white ground pepper. The fried rice is done. Garnish with spring onion and cilantro as you wish.
  • Make “Nam Pla Prik” by combining some minced garlic, fish sauce, chopped chili peppers and lime juice. Sprinkle this condiment on the fried rice while eating it for extra yummy flavor. Enjoy !
