Since this dish is inspired by the trending clay pot rice, one of the protein I use is the Chinese sausage or Lap Cheong. This Chinese sausage is sweet. Just so you know. Besides the Chinese sausage, I of course use chicken and also spam. However, please feel free to use your favorite type of sausage that you love. Spam in the recipe is optional.

One Pot Chicken Rice Recipe
Ingredients
- 4 dried Shitake mushrooms or some sliced version
- 1 lb chicken thigh Cut into bite sizes
- 1 tsp dark soy sauce optional
- 2 tbsp soy sauce
- 1 tsp Maggi seasoning optional
- 2 tsp sesame oil plus extra to drizzle at the end
- 1 tsp corn starch
- 2 Chinese lap cheong sausages sliced
- ¼ cup spam diced
- 3 -4 garlic cloves or 1 tbsp minced garlic
- 4 – 5 sliced ginger
- 2 cups Jasmine rice
- 2½ cup chicken stock or water
- 1 tbsp honey
For garnish
- 1 tbsp cilantro
- 1 tbsp green onion
- sesame seeds
- sesame oil
- 1 tbsp fried shallots
Instructions
- Soak the dried Shitake mushrooms in hot or warm water while preparing everything else.
- Wash and rinse the rice at least twice then strain and set aside.
- Combine ginger, garlic, soy sauce, dark sweet soy sauce, Maggie, ground white pepper, honey, and sesame oil. Add the rehydrated Shitake mushrooms.
- Add rice and chicken stock. Stir to combine
- Put the lid on and cook the rice using medium heat for 30 minutes. No need to open or stir. * Or if you use the rice cooker, just combine everything and cook it as normal.
- Sprinkle some spring onion or cilantro, sesame seeds, fried shallots if you have any. Drizzle some sesame oil on the top and enjoy !
