The Best Rolls for Sliders
I used the 24-pack of King’s Hawaiian Rolls. They are soft and perfectly sized for the ingredients in this recipe. However, you can also use homemade dinner rolls if you prefer.
Other Ingredients for Hawaiian Sliders
- Use lean meat (at least 80% lean and 20% fat) and be sure to drain any excess fat, as it can make the rolls soggy
- Chop the lemongrass, garlic, and shallots as finely as possible. If you can’t find fresh lemongrass, the frozen variety works well too. It often comes in a tub, making it easy to scoop and use.
Other Important Tips to Prevent Soggy Sliders
- Line the bottom layer of the rolls with cheese slices, then sprinkle shredded cheese on top of the cooked lemongrass beef. This helps seal in the juiciness and prevents the rolls from getting soggy. Any sharp cheese works well for Hawaiian sliders, but Provolone may give you the best stringy texture.
- Grease the entire baking sheet or pan with butter. This will toast the bread while helping to keep the rolls from becoming soggy.
- Bake uncovered to avoid steamy, soggy buns. If you prefer to cover them, bake for 25 minutes covered, then uncover for the last 5 minutes. Some people do this to prevent the buns from over-toasting. I haven’t noticed much difference between the two methods, except baking uncovered finishes faster.
Make Ahead, Storing, and Reheating
- Make Ahead : If you’re preparing these rolls for a party, you can make them a day in advance. Cover them with tin foil and refrigerate. When ready to bake, add an extra 3-5 minutes of baking time to ensure the buns are well-toasted and the cheese is melted.
- Store: Store the sliders in an airtight container and refrigerate for up to 3-4 days. If you prefer a smaller batch, consider using only 12 rolls while keeping the baking time the same. You don’t have to use all the filling; the lemongrass beef is also delicious with rice or in lettuce wraps.
- Reheat: To reheat, you can warm the sliders individually in the microwave for 15-20 seconds. Alternatively, reheat them as a batch in the oven at 350°F for 3-5 minutes.
What to Serve with Hawaiian Rolls Sliders
You can take the classic approach by serving these mini burgers with pickles, cucumbers, jalapeños, and fries. Alternatively, you can continue the Asian twist by serving them with pickled carrots and daikon. For Lemongrass Beef
- ½ tbsp vegetable oil
- 1 lb lean ground beef (at least 80% lean 20% fat. 90% lean is best.)
- 2 tbsp lemongrass (finely chopped. Fresh or frozen)
- 3-4 cloves garlic (minced)
- 2 shallots (finely chopped)
- 2 Thai chilies
- 2 tbsp fish sauce
- 2 tbsp sugar
For Hawaiian Rolls Sliders
- 24 King's Hawaiian rolls
- 3 tbsp melted butter
- 1 tbsp sesame seeds (optional)
- 1 tbsp parsley (chopped – optional)
- 8-10 sliced sharp cheddar cheese
- 6-8 oz shredded medium or sharp cheddar cheese
Instructions
Make Lemongrass Beef.
- Heat 1/2 tablespoon of vegetable oil in a skillet over medium heat. Add ground beef and cook until no pink remains.
- Tilt the skillet and spoon out excess fat, or use paper towels to absorb it.
- Add minced garlic, shallots, lemongrass, chilies, sugar, and fish sauce to the skillet. Stir-fry for about 3 minutes until fragrant. Set aside.
Assemble and Bake.
- Preheat the oven to 350°F (175°C). Brush about 1 tablespoon of butter on the bottom of a baking sheet. This will help toast the rolls.
- Cut the buns in half horizontally. Place the bottom halves of the rolls on the buttered baking sheet.
- Layer sliced cheese on the bottom halves of the rolls. Spread the lemongrass beef mixture evenly over the cheese.
- Top the beef mixture with shredded cheddar cheese. Place the top halves of the buns over the cheese, cut-side down.
- In a small bowl, mix 2 tablespoons of melted butter with chopped parsley. Brush the herb butter on top of the buns and immediately sprinkle with sesame seeds.
- Bake for 15 minutes, or until the cheese is melted and the tops are golden brown.Enjoy your delicious lemongrass beef sliders!
