For Pumpkin Scones
  • 2 cups all purpose flour
  • ½ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter (1 stick) (Cut into cubes or grated)
  • 1 tsp cinnamon powder
  • 1 tsp nutmeg
  • ½ tsp cloves
  • ½ tsp ginger
  • ½ cup pumpkin puree
  • 3 tbsp milk
  • 2 tsp vanilla extract
  • ½ cup chocolate chips (optional)
For Frosting
  • cup powder sugar (1 and half cup)
  • 8 oz cream cheese (1 block)
  • 1-2 tbsp milk
  • 1 tsp vanilla extract
For pumpkin spice cream cheese
  • ½ of the cream cheese frosting from earlier
  • 1 tbsp pumpkin puree
  • ¼ tsp cinnamon powder
  • ¼ tsp cloves
  • ¼ tsp ginger
  • ¼ tsp nutmeg

Instructions
 

Make the Scones
  • Cut the butter into cubes or shred it into small pieces, then place it in the fridge while you gather the other ingredients.
  • In the first mixing bowl, combine the flour, salt, baking soda, and baking powder. Stir or whisk until well mixed.
  • In a second mixing bowl, whisk together the pumpkin puree, egg, milk, brown sugar, vanilla extract, and pumpkin spice until smooth.
  • Toss the cold butter into the flour mixture, coating each piece with flour until pea-sized pieces form. If desired, add ½ cup of chocolate chips.
  • Fold the pumpkin mixture into the flour mixture until no large pockets of flour remain. The dough will be wet, but avoid adding more flour or kneading the dough.
  • Transfer the dough to a floured surface and shape it into a 6×6 or 8×8 inch square (about 1 to 1.5 inches thick, depending on how large you'd like the scones). Then cut the dough into 8 wedges.
  • Line a baking sheet with parchment paper, then arrange the scones on the lined sheet.
  • Chill the dough in the fridge or freezer for at least 20 minutes. Then preheat the oven to 400℉ while the dough is chilling.
  • Bake the scones for 15-17 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Let the scones cool on a rack for at least 10 minutes before glazing.
Make the Frosting
  • Whisk the cream cheese to soften. (I left the cream cheese on the counter at the start of the process.) Alternatively, microwave the cream cheese block for 30 seconds, then whisk with a fork.
  • Add powdered sugar and vanilla, and continue whisking until smooth.
  • Add milk one tablespoon at a time, whisking after each addition, until you reach your desired frosting consistency. (One to two tablespoons of milk should be enough.)
  • To make pumpkin spice cream cheese frosting, take half of the frosting from the previous step and whisk in one tablespoon of pumpkin puree and pumpkin spices until combined.
  • Transfer the frosting into a ziplock bag. Cut a tiny hole at the corner of the bag, and use it as a piping bag to frost your scones. Enjoy!
