Preparation of Wonton Cups

Mini muffin pans gives more depth with one wonton layer. However, if the mini muffin pan is not available, double layers for regular pans. Alternate square and diamond layers. Things You Can Prepare in Advance

  • Prepare wonton cups in advance. Bake at 350°F for 8-10 minutes for single layer cups. Bake 10-12 minutes for double layer cups. Cool and store in airtight container at room temperature. Crispiness lasts up to 4 days.

  • 1 mixing bowl

Ingredients
  

For Wonton Cups
  • 24 wonton wrappers (12 wrappers if using mini muffin pan or if you are making only 1 layer. )
  • 2 tbsp vegetable oil
For Garlic Butter Shrimp
  • 1 tbsp butter
  • 1 tbsp garlic (minced)
  • 12 shrimp (peeled and deveined)
For Mango Salsa
  • 2 cups mango (ripen and diced)
  • 2 Roma tomatoes
  • 3 tbsp red onion (chopped)
  • 3 tbsp lime juice (fresh)
  • 1 tsp sea salt
  • ½ tsp pure maple syrup (or sweetener of your choice -optional)
  • ¼ -½ tsp chili powder
  • ¼ cup cilantro (chopped)
For The Add-On Salad
  • ½ cup Romaine lettuce (chopped)
  • 1 avocado (diced)

Instructions
 

Make Crispy Wonton Cups
  • Pre-heat the oven at 350℉. Brush or spray the muffin pan.
  • Place the first wonton wrapper layer in the pan. Press to remove air bubbles.
  • Add the second wrapper layer without overlap. See the picture above. Brush or Spray the top layer of the wonton wrapper.
  • Bake the wonton cups about 10 – 12 minutes or until crispy. Leave them to cool down on a rack before serving.
Make Garlic Butter Shrimp While Baking the Wonton Cups.
  • Heat butter and garlic in a pan on high. Sauté garlic until fragrant.
  • Add shrimp and cook 2 minutes per side. Remove from heat and set aside.
Make Mango Salsa
  • Dice mangoes and tomatoes.
  • Chop cilantro and red onion.
  • Combine diced mangoes, tomatoes, onion, and cilantro in a mixing bowl.
  • Season with salt, chili powder, lime juice, and maple syrup or sugar.Mix everything together until well combined.
Assemble and Serve
  • When ready to serve, place chopped lettuce and diced avocado at the bottom of each cup. Add garlic shrimp to each wonton cup, then top with mango salsa. Enjoy!
