For the Ginger Peanut Dressing
  • cup lime juice (fresh)
  • cup toasted sesame oil
  • 2 tbsp vinegar (white vinegar, rice vinegar, or apple cider)
  • 1 tsp chili flakes
  • 3 tbsp fish sauce
  • 1 tbsp ginger (grated)
  • 1 tbsp honey (or sugar, maple syrup or sweetener of choice)
  • ¼ cup roasted peanuts (crushed)
For Crunchy Salad
  • 4 Persian cucumbers (chopped)
  • 1 avocado (diced)
  • 1 cup mango (diced)
  • 1 cup cabbage (shredded)
  • 1 cup carrot (shredded or ribbon)
  • ¼ cup cilantro (chopped)
  • ¼ cup roasted cashew nut (optional)

Instructions
 

Prepare Vegetables.
  • Wash and chop the vegetables from the list and toss them in a bowl. To create carrot ribbons, simply wash and peel the carrot. Then, use the peeler to continue peeling the flesh, creating ribbon-like strips.
Make the Ginger Peanut Dressing.
  • In a small bowl or Mason jar, combine fresh lime juice, sesame oil, vinegar, fish sauce, grated ginger, chili flakes, honey, and crushed roasted peanuts. Close the lid and shake the jar, or whisk the dressing together.
Assemble
  • When ready to serve, toss the mango, vegetables, and salad dressing together. The dressing can be stored in the jar and refrigerated for up to 1 week. Enjoy!
