Complete your meal with this Thai Crunchy Salad with ginger peanut dressing. This refreshing salad combines the creaminess of mango, cucumber, and avocado with the crunch of fresh vegetables like cabbage and carrots. The dressing ties it all together with a perfect balance of tangy and nutty flavors. Customize with your favorite veggies for a vibrant and satisfying dish!

Thai Salad Dressing
The original Thai salad with peanut dressing is called “Salad Kaeg.” It involves cooking coconut milk, curry paste, and roasted peanuts together, similar to Satay sauce. This recipe is a simplified version of that. My creamy and zesty dressing consists of crushed roasted peanuts, sesame oil, fresh lime juice, and grated ginger. You can roast the peanuts yourself or use store-bought roasted peanuts. Chop or pound the peanuts using a pestle and mortar; the small bits and peanut powder will help you achieve both creamy and crunchy elements. For this recipe, simply combine all the ingredients in a jar and shake well—your dressing is done! This dressing stays fresh in the fridge up to one week.

Asian Crunchy Salad Ingredients
When combining Asian crunchy textures and flavors, think of fresh and tropical ingredients. Be sure to include cucumbers, carrots, and cabbage for crunch. For a tropical twist, add ripe mangoes, cashew nuts, avocado, and cilantro or mint. My family always ensures this salad has at least cucumbers, mangoes, and avocado, so we achieve a perfect balance of crunchy, tropical, and creamy elements.
What to Serve with Asian Salad
This Thai crunchy salad pairs well with meat dishes such as Zucchini Mongolian Meatballs, Turkey Meatballs in Orange Sauce, Asian Sticky Ribs, BBQ ribs, and kabobs. It also lightens the richness of curry dishes such as Thai red curry, mango curry, and Massaman curry. I hope you give these recipes a try as well.
